Tasty Tuesday: Pumpkin Protein Loaf

I hate eating breakfast. Unless it's a smoothie or a piece of fruit, I'm never very interested in it. Don't get me wrong, I LOVE breakfast pastries - donuts, danishes, sweet breads - but they're so bad for you. I hate wasting so many calories first thing in the morning. I feel guilty about it all day long. But after a while I get sick of drinking breakfast and I need something more substantial. So I decided to come up with something fluffy and sweet that also had a serving of protein in it.

This is a Hungry Girl original that I've tweaked. If you've never checked out her website, go now. She has incredible swaps for EVERYTHING! Pumpkin Protein Loaf is a sweet, soft, moist breakfast bread with a kick of protein thanks to Quest Vanilla Milkshake Protein Powder. I love that stuff. 22 grams of protein per serving. You can mix it into anything. I put it in my smoothies every day, and try and put a scoop in whatever I make.

You won't believe how delicious and rich these little loaves are. And the kick of protein will keep your stomach full.

1 box of Spice Cake mix
1 12 ounce can of pure pumpkin
1/2 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
2 scoops of Vanilla Protein Powder

1. Preheat the oven to 350
2. Mix the ingredients above. It will be THICK and stiff, but that's okay!
3. Place into 12 mini loaf cavities or muffin tins.
4. Bake for 35-40 minutes or until cooked through,
